Fall and Winter Soups and Chilis

The air is getting cooler, though the sun still shines bright and warm in the afternoon. By evening, I am ready to pretend it is the middle of winter and we all need to delve into a steaming crock pot of stew.

I don’t really like stew all that much, but the idea is nice.

There are so many varieties of soups, chili, stew, and belly-warming dishes that it seems like fall and winter aren’t nearly long enough to sample them all. But then when it gets to be late afternoon and this idea of making soup is staring me in the face, I often chicken out and go with something traditional (like potato soup) or easy (like canned tomato soup).

For your sake and mine, I have compiled a list of scrumptious autumn soups to enjoy this fall and winter. Enjoy!

Starting from the top down we have Slow Cooker Creamy                                Tortellini  Spinach and Mushroom Soup from Holly at                                  3 yummy tummies. I love all the mushrooms and spinach                            packed in this soup; I will definitely be trying it out soon.

So many recipes for homemade tomato soup have lots of heavy cream and involve roasting fresh tomatoes (sorry, no). This Roasted Red Pepper and Tomato Soup from Beth at Budget Bytes has neither. I love that the prices are included for each ingredient as well!

Egg drop soup will always be one of my favorites, and I don’t make it nearly enough. This recipe from Ali at Gimme Some Oven has step-by-step photos to help you through the process, and even a 1-minute instructional video if that’s more your style.

Of all the soups I am most excited to try, this one tops the list. I can just see myself coming home to a steaming bowl of chicken enchilada chili (Chelsea @ Chelsea’s Messy Apron) with a side of cornbread dripping with honey. This will for sure be on the menu in the near future!

If your’re feeling a little adventurous, be sure to check out this cauliflower kale soup from Mira at Cooking LSL. It is a nice simple soup, with less than 10 ingredients. My experimentation with kale has been limited, so I look forward to trying this!

Aberdeen at Aberdeen’s Kitchen brings a lot of new flavors into her creamy butternut squash soup that I’ve never tried in                             mine. Despite “creamy” in the title, the heavy cream is kept to                     a minimum in this recipe. I might even venture to try it with                       coconut milk.

I will be straightforward here: minestrone soup has never been one of my favorites. I like the soup just fine, but the process of making it doesn’t excite me. Marzia’s recipe at Little Spice Jar might just be the exception here. It looks delicious, especially with the shreds of Parmesan melting on top, and it has a secret ingredient I can’t wait to try!

In one of my college classes we made a carrot soup, and I have been in love ever since. This creamy coconut ginger carrot soup is vegan-friendly (if made with yellow curry paste) and offers a lot of exciting flavors. This recipe is from Jenn at Fit Bottomed Eats. I will be honest, I giggle a little each time I see that title.

I don’t eat gnocchi nearly enough for as much as I like it. In the past I have tried gnocchi soups that have been disappointing, but I like the looks of this one from Diana at One Broads Journey. I love how many vegetables are packed in there; with this and a nice salad, an autumn evening would be complete!

I can’t vouch for the authenticity of this recipe as I have never tried the broccoli cheddar soup at Panera. However, I have tried a number of recipes from Yammie at Yammie’s Noshery, and I have no doubts of the deliciousness here.
