During our brief stay in Southern California, Kevin and I adopted a favorite little doughnut shop not far from our apartment. It seemed just a little bit wrong for a student of nutrition and dietetics to be frequenting a place of fried pastries, but we only indulged three or four times during our entire 1 1/2 year stay. And we split our two doughnuts over like three days.

This doughnut shop taught me that I was altogether wasting my time on all pastries but apple fritters. On those few early Sunday mornings when we would rattle down to the store in our old Jeep, I was richly rewarded with a fresh apple fritter, the sugary glaze barely even crusted over.

Although we did attempt to make apple fritters at home once, we were missing several ingredients and my efforts at substitution proved insufficient.

A year later, we stumbled upon a picture of apple fritter bread and decided to give it a try. Lo and behold, this healthier version of my fried favorite is equally delicious. It also doesn’t leave me with that full, oily feeling in the pit of my stomach.

If you make this bread when more than three people are within smelling distance, say goodbye to any leftovers. Fresh from the oven, this bread is moist and perfectly spiced, while the apples are just tender. The glaze really tops it off with that apple fritter feel.

If you are having guests this holiday season, autumn apple fritter bread is the perfect breakfast treat. It doesn’t require a ridiculous amount of work, so you can enjoy your company. We are planning to have it Thanksgiving morning. If our planning goes as well as it did last year, it should be a perfectly stress-free morning.

Instructions
Topping
  1. Combine topping ingredients in a small bowl and set aside.
Batter
  1. Combine sugar and oil, then whisk in eggs and vanilla.
  2. Combine both flours and baking powder, then stir into wet ingredients.
  3. Add the milk and stir just until mixed.
  4. Pour half of batter into greased 9 x 5" baking pan and top with half of apple filling. Top filling with topping and repeat layers of batter, apples, and topping.
  5. Bake at 350 degrees F for 50 minutes. If using muffin pans, layer as above and bake for 12-18 minutes or until toothpick inserted near center comes out clean.
Glaze
  1. While bread is cooling, combine glaze ingredients, using more or less milk as needed.. Drizzle over bread or muffins.
