What to do with a ridiculous amount of tomatoes
Are you inundated with tomatoes? This is a quick, easy way to use up a bunch of those ripe tomatoes before they rot.
Instructions
  1. Wash tomatoes, then cut out stems and any bad spots. Transfer to a large stockpot. Using a long sharp knife, slice into the tomatoes to help them release their juices.
  2. Cover pot with lid and heat over medium heat for about 30 minutes or until tomatoes have become very juice. Remove lid and turn down heat to about medium low. Continue cooking, stirring occasionally, until tomatoes are reduced to 1/3-1/4 of their original volume. This may take about 6 hours.
  3. Remove tomatoes from heat and freeze or can according to directions listed above.
