While oven is heating, combine all ingredients in a medium bowl and mash together with your fingers.
Scoop about 1 tablespoon of mixture onto a cookie sheet and flatten slightly. Bake in preheated oven for 12-15 minutes or until firm. Allow cookies to completely cool.
If desired, melt together glaze ingredients and drizzle over cookies. Store in airtight container in the refrigerator for one week or in freezer for up to two months.
