I’m not really complaining; Fall is my favorite season after all, with the food, and the colors, and the pumpkin, and the food. I just made some pretty incredible pumpkin streusel bars last weekend and now I have to figure out how to make them healthier. #dietitianproblems.

Anyway, back in May I received a phone call about a job out of state. I hadn’t even applied for the job, but that’s a story for another time. Two months later I was signing an offer letter and making arrangements to move to Oregon.

So here we are.

Our pup is the only member of our zoo that got to come, but as soon as we have a home of our own we will all be reunited.

If you don’t have a cute pumpkin mold as I do, you can find it and plenty of other adorable options online. And since we live in a rural area with rather limited shopping, Amazon and I have become close friends.

These pumpkin pupsicles are super easy to make; you’ll find that waiting for them to freeze is the hardest part. That or cleaning the blender (I hate cleaning the blender). Once they are frozen you can pop them out and transfer them to a plastic bag and store them in the freezer.

These treats can get pretty messy, so I recommend doling them out in the yard or on the patio. Definitely not on the carpet.

Pumpkin Pupsicles
Instructions
  1. Combine all ingredients in blender and blend until smooth.
  2. Pour into molds (about 2 tablespoons per mold) and place a treat in each cavity (if desired) to make a "handle" for the pupsicle. Freeze 3-4 hours or until firm.
  3. Transfer to a plastic bag and store in freezer for up to one month.
