Peanut Butter Energy Bites
This year Food and Nutrition Magazine started a recipe challenge that I am loving. They provide the recipe in the magazine, then it is up to readers to experiment, improvise, and report the results. January’s recipe was for Coconut and Date Protein Bites made with siggi’s yogurt. And they were delicious.
I really didn’t expect Kevin to like them all that much with all the seeds and dates in them, but he loved them! He told me that it would be quite alright to keep those around.
A couple of weeks later, I was scrolling through instagram and I saw these No-Bake Oatmeal Raisin Cookie Energy Bites from Maria at Two Peas and Their Pod.
Kevin was in California visiting his family at the time, and I was at home missing him. So I decided to make some yummy energy bites for him to enjoy when he got back. I also made him personalized mailing labels, even though he never mails anything. Guys, I really missed him!
Between my brother and I we demolished half of the energy bites before Kevin returned. Oops.
After having these around, I’ve decided I need to keep a regular stash on hand. They taste like a peanut butter cup, but way easier to make. When I’m feeling too non-committal for a granola bar, one or two of these does the job. And they’re incredibly easy to make.
And besides, now that we will all be working full time (or at least part time), it’s not a bad idea to have something to pop in your mouth while dinner cooks.
You could use a small scoop to make uniform spheres of chocolate peanut butter goodness; I just rolled them with my hands. But then of course you have to lick the dough off your fingers so…. your call.
Did you like how I neatly slipped the “we’re all working” bit in there? It’s pretty exciting, because that means there is a light at the end of the basement tunnel. We have high hopes of buying our own place in the next six months and living like grown up people.

Bites

- 1 Cup Quick oats Use gluten-free oats if avoiding gluten.
- 1/3 Cup Ground flax seeds
- 2 Tablespoons Chia seeds
- 1/2 Teaspoon Cinnamon
- 1/2 Cup Crunchy peanut butter I use Adam's Natural PB.
- 1/4 Cup Honey or agave nectar
- 1/2 Teaspoon Vanilla Extract
- 3 Tablespoons Mini chocolate chips

Wet Ingredients

- Combine dry ingredients in medium mixing bowl.
- Slightly warm peanut butter in microwave or on stove top.
- Combine peanut butter with remaining wet ingredients and stir into oat mixture. Stir well, then add in chocolate chips if desired.
- Roll mixture into 1-tablespoon size balls, adding more oats if it is too sticky to work with.
- Refrigerate in sealed container (if they make it that far).
