Chocolate almond butter lactation bites

Remember that food processor on my Christmas wish list?

Well, Merry Christmas to me! I decided I could spare some of my Christmas moolah to buy a food processor, and I’m glad I did.

The rest of my Christmas cash went toward a big comfy recliner and some cozy nursing attire.

People say babies are expensive, but that’s only half true. It’s the pregnant/nursing moms that break the bank 🙂

Anyway, if you want to make these lactation cookies, a good food processor is a must.

It makes quick work of these lactation bites, grinding everything together in a matter of minutes. Word to the wise: don’t make lactation bites during nap time. We were having trouble getting our little girl to sleep when I was making a batch of these, so I hauled the food processor to our bedroom and set up shop by the bathroom sink.

I’m just now getting around to toying with coconut flour, and I absolutely love what it did in this recipe. It gives a soft, fudgy texture to these lactation bites and makes them less dense than some of the other recipes I’ve tried.

And I was pleasantly surprised at the price! Since I only use coconut flour a few tablespoons at a time this bag will be lasting me a while.

Other notes on the ingredients :

Make sure to warm the honey and almond butter so they are nice and runny; your food processor will thank you.

Unless your dates are super super soft, I recommend pouring boiling water over them and letting them soak for a few minutes. Drain them before adding to the food processor.

What is the coconut oil for? My almond butter was pretty firm, so I decided to add some extra fat to help the mixture come together. Any type of oil should work just fine.

As good as these lactation bites may be, believe me when I say more is coming!

Instructions
  1. Pulse oats in food processor to make oat flour. Add remaining ingredients, starting with two tablespoons of coconut oil.
  2. Pulse ingredients until they come together in a smooth ball, adding more coconut oil if needed.
  3. Use your hands or a 1 tablespoon scoop to form mixture into bites.
  4. Store in refrigerator or freezer.
