Spicy Mushroom Meatballs {Vegetarian, Freezer Meal!}

  1. Finely chop onion and mushrooms in food processor.
  2. Heat oil in a large skillet over medium heat and add mushrooms and onions. Saute for 15-20 minutes or until liquid from mushrooms has evaporated.
  3. While mushrooms are cooking, combine remaining ingredients (except pasta sauce) in a large mixing bowl.
  4. Allow mushroom mixture to cool before adding to mixing bowl. Stir well and refrigerate for at least one hour or over night.
  5. Preheat oven to 400 degrees F. Scoop meatball mixture into greased 9×13 (should fill two pans) and top each meatball with sauce. Bake for 30 minutes.
  6. To freeze, place cooled meatballs on a tray or cookie sheet and freeze until solid, then transfer to bag to store in freezer.
