The holidays with special foods associated with them are by far my favorite. I mean, you kind of have to love food to be a dietitian.

I particularly love bringing holiday-themed treats to work. By Valentines Day I decided it was high time I earned my coworkers’ distrust, so I made a batch of fudge  brownie batter dip to share at work. They went wild! I did eventually disclose that it was made out of sweet potatoes.

Whaaat?!

Easter was a little tougher though. Sure, I could have made the brownie batter dip and faced no complaints. But I was in the mood for something different.

Speaking of bunnies, and Valentines Day, these little fluff bombs were my Valentines gift this year. We’re up to six fur children now!

Anyway, I looked to Pinterest to tell me what kind of healthy Easter treats to make(preferably without spending our entire food budget for the month) but I came up empty.

That’s when I started thinking in a different direction. What if I made this year’s Easter treat something my coworkers could enjoy in a different way?  Maybe I could make something so cute, and so spring-y that they wouldn’t even mind the lack of chocolate. Hmm…

Thus these birdseed bunnies were born. Although they are perfect for spring, you can make them for any occasion with different cookie cutter shapes.

Speaking of cookie cutters, these are my favorite. They are sturdy, and don’t hurt your hands to use. And the shapes actually turn out looking like a recognizable object. I can’t say that for all cookie cutters.

My original thought with these birdseed bunnies was to keep the Easter treats from overrunning the office.  I thought for sure someone would bring in Peep cupcakes or Cadbury cream eggs, but no. Not a single treat graced the kitchen counter at work this week. It’s probably better that way.

A couple of quick notes on these bunnies. Press the seed mixture into the cookie cutter very firmly, otherwise it will come apart easily. Also, let these dry thoroughly before packing them up in little gift baggies. Nobody wants a moldy bunny on their hands.

Instructions
  1. Combine first 4 ingredients in a mixing bowl. Add birdseed and mix well.
  2. Place a cookie cutter on a baking sheet covered with wax paper or freezer paper. Scoop some of the seed mixture into the cookie cutter and use the back of a spoon to press it down very firmly. Use a chopstick or drinking straw to poke a hole in the birdseed bunny for the jute.
  3. Repeat with remaining mixture, then set baking sheet in an undisturbed area to dry overnight.
  4. When bunnies are thoroughly dry, thread 10" pieces of jute through the holes and tie in a double knot. If desired, place bunnies in small cellophane bags and give as gifts.
